How many cucumber plants per person
Utah State University Extension recommends 2 to 3 cucumber plants per person for eating fresh and 5 to 8 plants per person if you also want to pickle. The calculator uses the middle of each range, 2.5 and 6.5 plants, and rounds the household total up to whole plants. A family of four needs 10 plants for fresh eating, or 26 for fresh eating plus pickling.

How the numbers are built:
- Row feet place the plants 15 inches apart, the middle of the 12 to 18 inches in the row that Virginia Cooperative Extension and Colorado State give.
- Harvest uses Virginia Tech's yield of 8 to 10 lb per 10 feet of row.
- Raised bed space follows the square foot method at 1 plant per square foot, so 10 plants take 10 sq ft.
Is that per planting or for the season?
Utah State's figure is for the season, so the calculator does not multiply it by plantings. Virginia Cooperative Extension gives a similar 2 to 4 plants per person, but per planting, and lists 2 to 3 spring plantings. If your family eats a lot of cucumbers, a second sowing a few weeks after the first spreads the same number of plants over a longer harvest instead of adding more at once.
Pickling versus slicing
The fresh plus pickling column covers the whole household supply, not an extra on top of the fresh plants. Pickling cucumbers are picked small and many at a time, so the larger count matters most if you put up batches of pickles.
Fitting them in
Cucumbers take less ground than the row feet suggest when they climb. Clemson Extension sets trellised vines 9 to 12 inches apart in rows 3 feet apart, against rows 5 feet apart for vines on the ground. Ten plants at 10.5 inches fill about 9 feet of trellis. In containers, plan one plant per 5 gallon pot.
